Its mineral and floral style, fresh and agile, was perfectly enhanced by the vinous and fruity notes brought by the Sherry cask. The acidity of the Pedro Ximenez harmoniously balances the sweetness of the honey.

Two years of finishing in a particularly active first-fill Pedro Ximenez cask enriched this Speyside single malt. Its mineral and floral style, fresh and agile, was perfectly enhanced by the vinified and fruity notes brought by the Sherry cask. The acidity of the Pedro Ximenez harmoniously balances the sweetness of the honey. On the nose, we discover pronounced notes of orange peel, dried plums, peaches, as well as a slight acidic touch of balsamic vinegar. On the palate, it reveals itself to be complex and multifaceted: initially dry and tannic, it then unfolds more. It is both lemony and marked by notes of raisins, followed by dried dates and chestnut honey with a hint of tea and aromatic herbs. The finish is very spicy, powerful, and persistent.
