A powerful agricultural delicacy with a surprising texture, obtained by cooking cane juice, Galabé had gradually disappeared from the stalls before the Payet & Rivière company revived this noble product from Reunion Island's history.
An initially technical challenge that required several years of research by Alexis Rivière and his team. Through testing, studies, discussions with Creole memoirs on the recipe, and trips to South America to study artisanal sugar factories, the Réunion sugar factory emerged in 2021. A small event on the island, which had not seen the creation of a sugar factory since the one in Quartier Français, 140 years ago.
The Galabé range is now available in candy and syrup.

Tasting notes

Nose: Caramel, réglisse.

Mouth: Bouquet aromatique complexe.

Final: Grande longueur en bouche.
